Tequila is a regional specific name for a distilled spirit made from the blue agave plant, primarily in the area surrounding the city of Tequila, 65 km northwest of Guadalajara, and in the highlands of the north western Mexican state of Jalisco. To be classified as Tequila, the spirit must contain at least 40% alcohol by volume. Tequila brands like Olmeca and Camino are a great base for cocktails, but can also be enjoyed straight. Blanco (unaged tequila) is harsher with the stronger flavours of the distilled agave plant. Reposado and añejo (aged tequila) are smoother, subtler, and more complex. Tequila is a type of Mescal, the distinction between the two is that tequila must use only blue agave plants rather than any type of agave. It is commonly served neat in Mexico and as a shot with salt and lime across the rest of the world. Tequila is also the main ingredient in the popular cocktail named the Tequila Sunrise.
