Vermouth is a strong alcoholic drink made from red or white wine flavoured with various botanicals like roots, barks, flowers, seeds, herbs and spices. Its production was started in the late 18th century in Turin, Italy. The vermouth was traditionally distilled for medicinal purposes but was later introduced as aperitifs served at fashionable cafes. There are two major types of vermouth, namely dry vermouth and sweet vermouth, the former originates from France while the latter originates from Italy.
Vermouth production starts with a base of neutral grape wine or unfermented wine must. Each manufacturer adds additional alcohol and a proprietary mixture of dry ingredients, consisting of botanicals such as aromatic herbs, roots, and barks, to the base wine, which may be redistilled before adding it to the wine or unfermented wine. After the wine is aromatized and fortified, the vermouth is sweetened with either cane sugar or caramelized sugar, depending on the style.
