Bourbon whiskey is a type of American whiskey, a barrel-aged distilled spirit made primarily from corn. American whiskey is distilled from a mash of fermented cereal grain, which contains the aroma and characteristics commonly attributed to Whiskey. There are six main categories of American Whiskey: Bourbon which must contain at least 51% corn; Corn whiskey which is made from a mash of 80% corn; Malt whiskey must contain at least 51% malted barley; Rye Whiskey, which must contain 51% rye; Malted Rye Whiskey – made from a mash of 51% malted rye and Wheat whiskey which is made from at least 51% wheat. An additional labelling in the US Whiskey market place is that of Tennessee Whiskey; the only defining difference between a Bourbon and a Tennessee Whiskey is that a Tennessee Whiskey is charcoal filtered; whereas, a Bourbon is not. By US Whiskey Law American whiskey must be distilled to no more than 80% alcohol, by volume and barrelled at no more than 125 proof; only water can be added to the final product.
